Elizabeth O’Malley RD
Dietitian Program Director
Elizabeth O’Malley is a licensed, registered dietitian with ten years of experience in weight management counseling. She received her Bachelor of Science in Food Science and Human Nutrition with honors from the University of Illinois, Champaign-Urbana. She has previously worked for a family physician counseling patients regarding nutritional management of cardiovascular disease and diabetes. Elizabeth has also worked in corporate wellness where she helped to educate employees on healthy lifestyle modification with nutritional presentations, individual counseling, and cooking demonstrations. Elizabeth is passionate about helping people achieve a healthy lifestyle. She enjoys working with people to develop an individualized weight management program.
In addition to her professional license, Elizabeth holds a Certificate of Training in Adult Weight Management from the American Dietetic Association. Elizabeth has served as the President of the Illinois Dietetic Association as well as their Public Policy Coordinator. Elizabeth is a member of the Academy of Nutrition and Dietetics (AND) and the AND Weight Management and Diabetes Care and Education Practice Groups.
Debbie Carsten, L.S.W.
Debbie has a Master’s degree in Social Work from Aurora University. She has also been trained as a Spiritual Director by the Christos Center for Spiritual Formation. As an author and retreat speaker, her passion is to empower others to overcome feelings of hurt, fear and shame that inhibit their potential. “It’s not easy, but it is worth it! That’s what I love about The Center for Health and Nutrition. They get that.” Because of her broad background in understanding human behavior, Debbie integrates a variety of evidence-based therapies into her teaching. In addition, she currently practices at an inpatient mental health facility where she counsels clients one-on-one and facilitates small group sessions for children, adolescents and adults.
Gabriella Filippi, M.S.
Gabriella Filippi, M.S. empowers individuals to develop their inherent talents, pursue purpose, and live an abundant life with passion and service. Mentor and spokeswoman for various professional and charitable organizations, Gabriella is a physiologist who enjoys speaking, coaching as a health consultant, and writing for national and international publications. She authored Celebrate Your Seasons and was a contributing author to Along the Way.
Courtney Southwood, MS RDN LDN
Courtney has been working in the field of nutrition and wellness for the past 8 years, interning and working in corporate wellness, clinical, and community nutrition. Courtney has spent the last 5 years working as a clinical registered dietitian nutritionist (RDN) specializing in pediatrics. She initially worked in the acute setting as the general medical/surgical RDN for a 44-bed pediatric unit but has spent the last 3 years providing outpatient nutrition services for a hospital-based ambulatory care clinic. In this role she supported multidisciplinary sub-specialty clinics including Cystic Fibrosis, medically complex, oncology survivorship, and severe and persistent asthma as well as providing individual nutrition counseling and education for a variety of conditions (weight management, GI, food allergies, developmental disabilities, picky eating, nutrition support, and general, healthy age-appropriate recommendations). Courtney has a passion for outpatient education and counseling, enjoys teaching group education classes as well as working one-on-one with clients to assist them in achieving their health-related goals. In her free time she enjoys spending time with her family, traveling, biking, and kayaking.
Mary Miriani, EP-C
After achieving successful permanent weight loss, Mary became passionate about teaching others the tools necessary for permanent weight loss and good health and therefore returned to school. Mary earned a bachelor’s degree in Exercise Science and became a Certified Exercise Physiologist by the American College of Sports Medicine (ACSM). Mary is a published author with many contributions to IDEA Fitness Journal, Health Your Way Online, and has been published in Marie Claire magazine. Her first children’s book was published in November 2012.
Mary is educated, certified and experienced to work with people who have medically controlled diseases such as diabetes, rheumatoid arthritis, and cardiovascular issues. Mary enjoys working with people who would like to learn how to not only lose weight, but to keep the weight off permanently using her philosophy of “Inspiration plus motivation equals action and action plus dedication equals success.”
